Jackfruit Kaap

Time 20 min
Ingredients
Jackfruit (thin sliced ) 1 medium size  (10-12 slices) 
Semolina 2 tbsp
Rice flour  2 tbsp
Red chili powder 1/2 tsp
Turmeric Powder 1/4 tsp
Kokum juice 1 tbsp
Salt to taste
Oil shallow frying

Method
Make medium size slices of jackfruit. Then apply kokum juice, after that apply red chili powder, turmeric powder and salt. Keep it for 1/2 hr. 
Mix semolina and rice flour, little salt. Deep jackfruit in that mixture on both sides and shallow fry in little oil on non stick tava. Serve hot.

Vangyache Masala Kaap


Time 20 min
Ingredients
Eggplant (thin sliced ) 1 medium size  (10-12 slices) (i use eggplant especially used for bharit)
Gram flour (Besan) 1/4 cup
Rice flour  1/4 cup
Cornflour 1/4 cup
Red chili powder 1/2 tsp
Garam masala 1/4 tsp
Turmeric Powder 1/4 tsp
Amchur powder 1/2 tsp
Coriander powder 1/2 tsp
Salt to taste
Oil shallow frying

Method
Make not thin nor thick slices of eggplant. Then deep slices in bowl containing water and salt. Keep it for 1 hr or atleast 1/2 hr. 
Mix all ingredients in a shallow plate. Do not add water. Keep it aside.
Heat little oil in non stick tava. Then take one slice from bowl containing water and salt, drain water then dip in masala mixture upside down and then drop them in flat non stick tava, shallow fry till golden brown. Shallow fry from both sides adding little oil. Serve hot.

Tip
Because of moisture of slices the masala mixture gets stick to slices.

Paneer Fingers / Paneer Pakoda


Time 20 min
Ingredients
Curd 2 tbsp
Paneer cubes 6-7
Schezuan 1 tsp / Chili sauce + Soya sauce 1 tsp
Red chili powder 1/4 tsp
Lemon juice 2-3 drops
Corn flour 1 tsp
Breadcrumbs 1 tsp
Salt to taste
Oil for frying

Method
Mix together all ingredients except corn flour and breadcrumbs. Keep it in refrigerator for 1/2 hr.
Make dry mixture of breadcrumbs and cornflour. Now apply cornflour breadcrumbs mixture to paneer cubes.  Then deep fry in oil till golden brown. Then drain the excess oil on absorbent paper. Serve hot with tomato sauce/green coriander / mint chutney.

Cucumber / Kakdi Dosa

Time 15 min
Ingredients
Dosa batter 1 cup
Grated carrot 2 tbsp
Grated onion 2 tbsp
Grated cucumber 1/4 cup
Grated ginger 1/4 tsp
Butter 2 tbsp 
Salt to taste

Method
Mix carrot, cucumber, ginger, onion, salt and batter.
Heat non stick pan, sprinkle salt water (2 tbsp water+1/4 tsp salt) all over the pan.
Then immediately pour spoonful of batter at the center, with the help of spoon spread batter fast in circular fashion.
Apply 1tsp ghee all over the dosa, then roll dosa and serve hot.

Kalela Fritters / Bhajis


Time 20 min
Ingredients
Bittergourd 2-3 small size
Gram flour (Besan) 2 tbsp
Makai flour 2 tbsp
Rice flour 2 tbsp
Red chili powder 1/2 tsp
Turmeric Powder 1/4 tsp
Water 3-4 tbsp or more
Pinch of baking soda
Salt to taste
Oil fry frying

Method
Make thin slices of bitter gourd. Apply turmeric powder and salt. keep it aside for 15 min.
To make batter, mix all ingredients (keep in mind that you had added salt to bittergourd too) in a mixing bowl. The consistency of the batter should be in such a way that if you hold it in spoon it should not fall so easily. It means it should not be very watery. Keep batter for 2 -3 min aside. Heat the oil in kadai. Then take one slice apply batter and then drop them in kadai, deep fry till golden brown. Remove from oil and soak in the tissue paper to remove excess oil.

Dudhi Dhokla / Dudhi Muthia

Time 10 min
Ingredients
Dudhi 1 cup peeled and grated
Wheat flour 1/2 cup
Chickpeas flour 1/2 cup
Semolina 2 tsbp
Grated ginger 1/2 tsp
Chopped green chilies 2
Baking soda 1/4 tsp
Lemon juice 1/2 tsp
Sugar 1/4 tsp

Seasoning
Curry leaves 3-4
Mustard seeds 1/4 tsp
Cumin seeds 1/4 tsp
Sesame seeds 1/4 tsp
Pinch of Asafoetida
Oil 1 tsp
Green chilies 2 cut into pieces
Little Salt 

Method
Mix all ingredients. You need not to add water because grated dudhi contains moisture. For precaution u can squeeze gently dudhi to remove little water. Keep water separately if you need to make dough then use this only.
Then in greased plate make layer of this mixture. Steam for 15 min. Allow it to cool.
Heat oil in pan, add mustard, cumin, asafoetida, curry leaves, green chilies, sesame. Mustard seeds will pop out. To this add cut pieces of dhokla. Mix well. Cook for another 2 min. Garnish with coriander and serve.

Homemade Tortilla Chips

Time 25 Min
Ingredients
Maize flour 1.5 cups
Wheat flour  0.5 cups
Cornflour 1 tbsp
Cumin coraindar powder 1/2 tsp
Chili powder 1/2 tsp
Mixed herbs 1/4 tsp
Salt to taste
two pinch of Black salt
Oil for frying
Warm water 1/2 cup or more
Wheat flour 1/4 cup for dusting
Iron Tava

Method
Mix all ingredients in a mixing bowl, Knead the dough hard by adding warm water.  
Then make 9 -10 portions of dough of 1.5 inch in size. Take one portion of dough apply little flour on the polpat or flat surface. Then roll gently to make thin tortilla of 7-8 inch in size. First roast each tortilla till it is becomes very light brown in colour. Keep it aside. Repeat the process. Then take entire bunch of tortilla cut it into triangular shapes. Deep fry in oil. Or you can bake at 200 degree for 7-8 min.

Methi Khakhra

Time 25 Min
Ingredients
Wheat flour  2 cups
Methi (Washed and Chopped) 1/2 cup
Carom seeds 1/2 tsp
Cumin coriander powder 1/2 tsp
Chili powder 1/2 tsp
Salt to taste
Sugar to taste
two pinch of Black salt
pinch of asafoetida
Oil 4-5 tsp

Wheat flour 1/4 cup for dusting
Iron Tava

Method
Mix all ingredients in a mixing bowl, Knead the dough soft by adding sufficient water. Keep it aside for 15-20 min. 
Then make 9 -10 portions of dough of 1.5 inch in size. Take one portion of dough apply little flour on the polpat or flat surface. Then roll gently to make thin chapati of size 10-12 inch in size. First roast each khakhra till it is becomes little brown in colour. Keep it aside. Then make bunch of 5 khakhra and roast on tava by placing small size pressure cooker (preferably 1-5 to 2 lit) on the top of the bunch. Just roast by moving cooker in circular manner. After every 1 min remove khakhra facing tava, now it should be placed on top facing pressure cooker, each khakhra should be roasted in this way on medium flame, with very fast movement. Otherwise khakhra will get stick to each other. Remember to roast khakhra on both sides, that is why it becomes very thin and crispy. Apply ghee on khakhra and sprinkle jiralu powder and serve.

Other Method
Put on thick gloves one over the other on your hand. Then make two bunch of chapatis and then move and press your hand wearing gloves in circular fashion on both sides of chapatis so that it becomes crispy. In this way you can roast 10 khakhra in 5 min only.

French Fries in Indian Style

Time 15 min
Ingredients
big size potatoes 2
Oil for frying
Salt to taste
Water 6-7 cups
Alum 

French fries cutter

Method
Peel off potato make french fries with the help of cutter or if you dont have then do it with knife. It should be 1/2 inch in width and length depend on your size of potato. 
Heat water in pan, after it boils add salt and fries. Then insert alum in water and move your hand in circular fashion, then immediately remove alum. Stir well for 2-3 min. Then switched off the flame. Remove slices from water on to a cotton cloth. With the help of another cotton cloth remove water from slices. Water should get removed. Allow it to cool for 5-6 min.
Then heat oil in kadai. After oil gets hot then add fries and fry till becomes crispy. The flame should be constantly medium high throughout procedure. After it is removed from kadai keep it on tissue paper to remove excess oil. Sprinkle salt & pepper and serve.

Chinese Bhel

Time 10 min
Ingredients
Fried noodles 2 cups
Sliced capsicum 1/2 cup
Grated carrot 1/2 cup
Shredded cabbage 1/2 cup
Chopped spring onion 1/2 cup
Schezuan sauce as required
Tomato sauce as required


Method
Mix all ingredients and serve.

Corn Tikki


Time 15 min
Ingredients
Fresh corn 1 cup
Chopped onion 1 big size
Green Chili 1
Ginger 1/4 inch
Ghat masala 1/4 tsp
Cornflour powder/rava 2 tbsp
Lemon juice 1/2 tsp
Coriander 1 tbsp
Salt to taste
Oil for shallow fry

Method
In blender mix all ingredients except oil & cornflour. Make coarse mixture. Grinding process leaves water. So squeeze and remove excess water. Make 7-8 balls. Take one ball, gently press to make flat round in shape, dip in cornflour/rava, so that it get coated very well from all sides.
Heat oil in tava, shallow fry till golden brown. Flip up side down. Roast with little oil.
Serve hot with sauce or mint chutney.


Makhana / Lotus Seeds Chivda


Time 10 min
Ingredients
Makhana 2 cups
Chopped green chilies 2-3
Mustard seeds 1/4 tsp
Cumin seeds 1/4 tsp
Curry leaves 3-4
Turmeric powder 1/2 tsp
Cumin coriander powder 1/2 tsp
Asafoetida 1/4 tsp
Powdered sugar 1 /2 tsp
Roasted groundnuts 2 tbsp
Dalia 2 tbsp
Oil 2 tbsp
Salt to taste

Method
Heat oil in pan, add mustard seeds, cumin seeds, curry leaves. After mustard seeds pops out, add asafoetida, green chilies, fry for about 2-3 min. Then add turmeric powder, cumin coriander powder, groundnuts mix well. Immediately add makhana, mix well. Then add salt and powdered sugar, mix well. Keep on low flame for 4-5 min.  Switch off the flame allow it to cool. Store in airtight container.

Sadha / Plain Khakhra


Time 25 Min
Ingredients
Wheat flour  2 cups
Carom seeds 1/2 tsp
Cumin seeds 1/2 tsp
Salt to taste
Pinch of Black salt
Oil 4-5 tsp

Wheat flour 1/4 cup for dusting

Method

Sweet Corn Butter Chat

Ingredients
Sweet corn 1 cup 
Butter 1/4 tsp
Chaat masala 1/4 tsp

Method
Cook corn by adding salt in cooker for 2-3 whistles. Allow it to cool. Then mix cooked corn with chaat masala, butter. Serve hot.

Methi Masala Mathri

Time 30 min
Ingredients
All purpose flour / Maida 1 cup
Semolina / Rava 1.5 tbsp
Fresh fenugreek / methi leaves / kasuri methi 1/4 cup
Dhana jeera powder 1/2 tsp
Ajwain 1/2 tsp
Sesame seeds 1/4 tsp
Amchur powder 1/4 tsp
Turmeric powder 1/4 tsp
Red chili powder 1/2 tsp
Finely chopped coriander 1 tsp
Kala namak / rock salt 1/4 tsp
Water 1/2 cup or less
Oil for deep frying
Salt to taste

Method
Mix all ingredients in a mixing bowl. Take 2 tbsp oil in seasoning pan, after it becomes very hot, switch off the flame and then add oil to the mixing bowl spread evenly. Now add water spoon by spoon knead the dough. The dough should be hard. Cover with lid and keep it aside for 15 min. Divide dough in 3-4 batches. Take one ball roll over with rolling pin. It should be thicker than chapati. Make pieces with round mold. Deep fry in kadai till it becomes crispy.

Tip
If you want u can add more red chili powder. 
After 15 min rest, dough becomes soft, so keep this in mind while kneading and adding water. 




Amiri Khaman

Time 20 min
Ingredients
Chickpeas / Chana daal 1 cup
Pomegranate seeds 1/2 cup
Garlic cloves 3
Ginger 1/2 inch
Green chilies 2-3
Coriander 1 tsp
Mustard seeds 1/4 tsp
Cumin seeds 1/2 tsp
Turmeric powder 1/4 tsp
Eno 1 tsp
Oil 1 tsp
Salt to taste
Coriander and nylon sev for garnishing

Method
Soak chana daal in water along with 1/4 tsp cumin seeds for 2 hrs. Remove water then grind chana daal, garlic, ginger, green chilies, turmeric powder, coriander, salt into a coarse paste.
It will look like idli batter. Add eno to this batter. Mix well. Apply oil to steamer/idli patra. Pour the batter steam for 15 min. Then remove from idli patra, crush the idlis. In kadai heat 1 tsp oil add mustard seeds, cumin seeds and and pinch of asafoetida. Pour this on crushed idlis. Mix well. Now add pomegranate mix well. Garnish with coriander and sev. Serve.

Mathri

Time 30 min
Ingredients

Samosa


Time 45 min
Ingredients
For The Dough (crust)
Maida 1 cup
Hot oil 1 tbsp
Ajwain 1/4 tsp
Salt  1/2 tsp
For The Filling
Boiled mashed potato 1/2 cup
Boiled green peas 1/4 cup
Cumin seeds  1/4 tsp
Pinch of asafoetida
Ginger garlic paste 1/2 tsp
Chili powder  1/4 tsp
Cashewnuts and kismis 1/2 tbsp
Chopped coriander 2 tsp
Sugar 1/2 tsp
Oil  3 tbsp
Salt to taste

Method
For making dough 
Combine all the ingredients and knead into a semi-soft dough using enough water. Knead very well for 8-9 minutes. Keep it aside for 1/2 hour. Then divide the dough into 3-4 balls.
For the filling
Boil green peas in microwave for 3-4 min. Keep it aside.
Boil potato in cooker by adding water. Allow it to cool. Peel and keep it aside.
Heat oil in a pan and add the cumin seeds. After seeds crackle, then add asafoetida, then ginger-garlic paste, chili powder, and salt. Mix well. Then add mashed potato, green peas, dry fruits, sugar, coriander. Mix well. Switch off the flame. 
Allow it to cool and divide into 5-6 equal portions. 

Actual method
Roll one ball to make chapati of 8-9 inch in size. Then cut at center. Take one end, fold on other side, then press at the end, insert spoonful of stuffing, then again press to close ends. Deep fry in thick bottom pan or kadai on low flame.
